Today I went back to work after two long weeks off! The break was much needed- it was so good to spend time with family and friends, listen to Christmas music, and sleep in until 8:00. (I used to think that was early- now I am used to already being up, ready, and crossing things off my to-do list!) My break was also filled with these… lots and lots of these!
My morning started off nice and early around 5:15. I like love (ok, am addicted to) coffee One of the first things I do after I get up is make coffee. I’m convinced it was even better this morning with the new travel mug that I got for Christmas! Seriously, how cute is that?! It is also perfect for my job because I never know what each day is going to hold- I’m learning more and more to be flexible when things don’t go as planned.
I was glad to get back into a routine today though, and see all of my students again. The day actually went by pretty quickly!
After work, I headed to the gym to get a workout in. I love working out on Mondays because I feel like I am starting my week off on a positive note. I started running on the treadmill and planned to take a Body Pump class afterwards. To those of you who don’t know, Body Pump is a group fitness class offered by the Les Mills workout program. High- energy songs keep me engaged and motivated the whole time! Each song focuses on strengthening a different body part (biceps, shoulders, etc.) I love this class because you can adapt it to be more or less challenging by adding different weights.
I was able to get 4 miles in before it was time for my class. Running 5 miles was my goal today, but I felt pretty tired after the class, so was tempted to call it a day and head home. I knew that I would feel so much better if I followed through with what I had told myself, though. It may have been just a mile, but I did the same thing a few days ago (not having enough time for my entire workout before I went to take a class), and ended up not finishing my workout then. I didn’t want to make it a habit, so I pushed myself and was done in no time at all!

After teaching all day and working out, I was definitely ready to head home and relax. Since the past few weeks may have been filled with too much chocolate and Christmas cookies, I am trying to maintain an especially clean diet for the time being. I didn’t know exactly what to make for dinner; I just knew I wanted something healthy. So I pulled together a variety of different vegetables, cut them up into small pieces, and sautéed them in a medium sized frying pan.
Sprinkle a dash of garlic salt and Italian seasoning on top and we’re good to go… sometime simple is the way to go.
In the mix: red and yellow peppers, zucchini, onion, carrots, and corn.
This actually turned out really well- I loved it and it is definitely something I plan on making again. As I was deciding what to put in, I thought about how we can’t be afraid to experiment in the kitchen. You never know how something is going to turn out until you try it- so don’t be afraid to take a chance and try something new. Just the other day, I was making pumpkin bread, and didn’t realize I was out of a few of the ingredients until I had already started. I made several substitutions along the way, and the recipe still turned out just fine!
There was the time I made cupcakes called “Never Fail Cupcakes.” Needless to say, they didn’t work out so well were a disaster. I’m still not sure what happened to this day… but you never know until you try something!
