Chopped Salads And My Iced Coffee Addiction

Hello beautiful people!

Awhile ago, I saw Julie over at Peanut Butter Fingers, blog about this handy-dandy salad chopper she ordered on Amazon. Last week was like any other, I was eating peanut butter out of the jar (don’t act like you’ve never done it).

Then I thought – You should really be eating more vegetables. (I am great about grabbing an apple or banana to eat throughout the day, but when I’m hungry, carrot sticks are not my go-to.) And I thought of the salad chopper. So on to I went! There are lots of different kinds but I decided to go with the same one that Julie did because she liked it, and I like her blog, so I figured it was a winner.

For less than $12, I ordered the Amco Stainless Steel chopper. This salad chopper is no joke – it slices through vegetables in an instant.

Since then, I have been eating ALL THE SALADS. Isn’t there just something about a chopped salad that makes it more fun to eat?!

Besides the chopped salad addiction, I’ve also had my fair share of iced coffee this summer. I can’t seem to get enough! When I was teaching summer school for the first month of the summer, I found myself stopping almost every morning to fuel the iced coffee addiction. The barista at Starbucks recognized me by the end of summer school – “your usual today?” he started to ask. They know me at Starbucks … yessss! Claim to fame, people.

Clearly, you have to try it everywhere to know who has the best one.


My next summer project should really be to make my own iced coffee at home. Stay tuned!

I finished teaching summer school last week, so I’ve had plenty of time to relax, get in some good workouts, and browse Pinterest for teaching ideas for the fall. I’ve been able to spend more time reading too, which is a habit I’ve been wanting to get back into.

I’ve also been laying by the pool like it’s my JOB.


(And the beach. I don’t discriminate.)

And it’s off to the gym now! I love working out on Mondays because it sets the week off in a positive and healthy way. Never miss a Monday!! Have a great one!
